Mango Vinaigrette on Bibb Lettuce Salad

Mango vinaigrette to add flavor to any salad

I kept calling this the “psychedelic mango dressing salad.” The idea here was to make a classic French vinaigrette (dijon mustard rocks!) and see if it could take the sweetness of the mango puree - turns out, it could totally handle it. I paired it with a simple head of bibb lettuce with the bottom cut off, just placed onto a platter and sprinkled with radishes cut on a mandolin.

3 tablespoons mango purée

1/4 cup olive oil

1 tablespoon red wine vinegar

2 heaping teaspoons of Dijon 

1 tablespoon lemon juice

1/2 shallot, finely minced
