riced cauliflower, shrimp and pineapple salsa recipe

every since I discovered riced cauliflower, aka throwing cauliflower in the blender until is had a rice-like consistency, I've been meaning to get around with incorporating it into a Carribbean-inspired dish. Rice is the best. It's the ulitmate base ingredient, which explains why it's a fundamental ingredient for some many cuisines around the world - not to mention it's cheap. But everything has a price and for rice it's mostly around your waistline, so we've turned to replacing it with a vegetable. This cruciferous vegetable is high in fiber and is, surprisingly, a cousin to the much-touted kale

Make this for lunch or dinner on a hot day. It has a whole bunch of my favorite things - cilantro, pineapple, cauliflower, bok choy, shrimp - seriously, these are my favorite things. We had a whole bunch of pineapple left over after a BBQ, so I decided to pair it with shrimp and put it over rice. My boyfriend calls this a classic vegetable pile, it's basically how I cook when I'm alone.

You could also make a whole bunch of the pineapple salsa and keep it for a salsa to use with chips or on a salad. Just sayin'. 

Grilled Shrimp with Pineapple Salsa & Riced Cauliflower, with a side of Garlicky Bok Choy 

serves 2,3

riced cauliflower (throw a head of cauliflower in a blender until it's a grainy, rice-like consistency)

4 slices of pineapple, chopped 

10 grape tomatoes, chopped 

1/2 jalapeño, chopped

handful of chopped cilantro 

juice of 1 lime 

juice of 1/2 orange

1/8 red onion, chopped

pinch or two of sea salt

12 shrimp

1 bunch of baby bok choy

5 cloves of garlic, minced

Mix cilantro, tomato, lime juice, sea salt, pineapple, jalapeño, orange juice. Give it a taste. You might want a little more lime or some more jalapeño, this is an eyeballed recipe so go ahead and mess with it a bit to get it to your liking. 

Rice the cauliflower and then set it in a skillet to toast up a bit. I 've had the best success with a cast iron skillet. This should take about five minutes.

Move cauliflower over to a bowl and use the same hot skillet to heat up the garlic 2 - 3 minutes. Add the bok choy, 5 minutes or so. Add shrimp and grill.
